100 Layer Hollow 2.0
With 100 layers of 1095 and 15n20, this gyuto incorporates a forged hollow kurouchi (forge finish) behind the bevels for added food release.
Hardned and tempered with versatility in mind, the knifes bevels were flatned and polished on whet stones before being etched to reveal the damascus pattern in the steel. The edge is then sharpend using whet stones.
The knife itself maintains an edge length of 216mm and a total blade length of 238mm, coming in at
65mm deep at heel, with a 5mm - 1mm distal taper through spine.
The main body of the handle is made up from locally souced Walnut, and contains a bolster of 5000 year old Bog Oak. The handle is 145mmx30x30mm at its widest, with a gentle taper through every plane in towards the heel of the knife.
The gyuto weighs a total of 229 grams.
